Sacred Smoky Tofu Bacon

Before you begin, take a breath. This is more than a recipe — it’s a ritual of transformation, turning humble tofu into something smoky, savory, and deeply satisfying.

Ingredients (for 2 blocks of tofu)

  • 2 blocks extra firm tofu, pressed
  • 1/3 cup soy sauce
  • 1 tbsp homemade garlic + onion powder (from skins)
  • 2 tsp organic coconut palm sugar
  • 1 tsp liquid smoke
  • 1.5 tsp smoked paprika
  • 1 tsp nutritional yeast
  • 1 capful (~1 tsp) apple cider vinegar (with the mother)
  • 1 capful (~1 tsp) sunflower oil
  • A few pinches of Chinese 5-spice
  • Pinch of crushed black cardamom (from pod)
  • 1/2 tsp freshly ground black pepper

Instructions

Place tofu blocks in your tofu press and let them sit for 20–30 minutes to remove excess water.

In a bowl, whisk together all marinade ingredients until fully combined.

After pressing, slice tofu into thin bacon-like strips and pat dry if needed.

Place tofu strips in a shallow dish or container and pour marinade over them, coating each piece.

Let tofu marinate for at least 30 minutes (or overnight for deeper flavor).

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Lay tofu strips flat on the baking sheet. Optional: place another tray on top to gently flatten.

Bake for 20–25 minutes, flipping halfway through, until edges are crisp and caramelized.

Serve hot or store in the fridge for up to 5 days. Re-crisp in the oven or skillet as needed.

  • Still pat tofu dry before marinating to help the sauce cling better and crisp during baking.
  • Silken or soft tofu will not work for this recipe—stick with extra firm or higher.
